WSS2k3 was tested with AV software and that was fine. You will need to
check with the AV vendor of your choice to ask if they support running on
WSS2k3, but generally it isn't a problem.
As to performance, the difference will be based on quite a few factors:
1) AV Engine. They all use different engines with different optimizations
(some keep files open longer, scan more or less agressively, etc.).
2) Change rate of files. Every time a file gets touched, it will be
scanned. If you have a very high change rate of very large files, this can
hurt perf.
3) Memory installed. Depending on the solution, you may lose 30-->100MB of
caching. This may not affect the overall perf in a measurable way except on
boxes with realtively little memory. Though if you have a very high change
rate of very large files (e.g. .iso images), then the memory footprint can
be 500+MB.
Generally speaking, you won't notice a difference under a normal/realistic
(i.e. non-benchmark) load.
