Hello Jerry,

Marzipan seems to be made extra sugary for the US market. So, we make
our own for Christmas. Yum.
I used to like marzipan when I was a kid. Now I find it too sweet. All
my life (as long as I had elders, anyway), for one reason or another I
was told , "Your taste will change." It's treasuring to hear that it's
the marzipan, not my taste, that's changed.

It's the same with Lindt chocolate. When I worked for an ultrasound
company one of our board members was from Switzerland and he brought me
the real deal from there. Since we only had those big board meetings
every three months or so we broke all the pieces apart and kept it
treasured away in the fridge so it would last. The chocolate they ship
for sale in the US seems to be made extra sweet.
When you and your wife have the time try to make your own marzipan from
those raw almond cream bars. The last step, the application of powdered
chocolate, is kind of messy but it's all worth it. If you really have to
buy then try to get "Luebecker Marzipan" from a German store. The 'ue'
is really an umlaut-u.

Ah! Lübecker. I'll look out for it.

Niederegger is one of the more famous brands. IIRC a red logo on golden
wrappers. The smaller pieces have red wrappers without the extra
cellophane cover.
