pls recommend me some embedded projects for training |

hi all,
I am building a training program for our new embedded software engineers! I will give them alot of lectures related to
1. embedded system introduction
2. embedded programming in C/C++
3. popular embedded IDEs
4. RTOS- ThreadX
the fact is that, I would like to find a practical embedded system projects for them to practice what they have been learning!
could you pls help me to give some useful advices about what projects should I do? I would love to choose a simple project with alot of workload that you can do on software  ,
